Spinach Saute
(Ispanak Kavurma)

500 gr spinach, roots cut off*, washed several times, drained
2 tbsp extra virgin olive oil
1 small onion, finely chopped
2 tbsp crushed tomatoes, in a can
1/2 tsp nutmeg, grated
4 tbsp beef broth or chicken broth or water
Salt
Pepper
Sauce:
1/2 cup yogurt + 1 garlic clove, smashed with salt
1 tbsp extra virgin olive oil
1/2 tsp red pepper
Boil the spinach for 5 minutes, drain. Squeeze the spinach with your hands. Then chop it on a cutting board.
Saute the onion in a medium sized pot with olive oil and salt until the colour of the onions turn to light brown. Add the spinach, crushed tomatoes, nutmeg, broth and pepper. Cook for about 5 minutes over medium-low heat. Turn the heat off.
Let it cool down for a few minutes. Arrange on a service plate. Place the yogurt with garlic on top. Heat up the olive oil in a small pan, add in the red pepper and then turn the heat off. Don't burn the pepper! Pour all over the yogurt sauce. Serve with any kind of beef or chicken dish.
* You can make Spinach Root Salad with the roots.
Makes 2 servings.

I've always wondered, what kind of red pepper do people use for that garnish - is it pul biber or paprika or American-style powdered dried red pepper? I've been using pul biber but it doesn't seem quite right...
I appreciate turkish culture , will try turkish cuisine .By seeing the ingredients in the recipes,I am sure it will be tasty.

It can be paprika or American style powdered dried red pepper. If you like add cayenne pepper too which gives more colour to sauce. Don't use pul biber:)

I am so very happy to have found your site. I lost my mother to cancer 3 yrs ago and we all miss so much. I wanted to make this dish she used to make for my Dad that he kiked that had ground beef and chopped cabbage sauted and it tasted kind of spicy. I wish I could remember more about it. I came across this site looking for the recipe for Borek so my daughter could make it for her family. You have it and it is exactly like I remember she making it. I remember my "Nonie" grandmother making the phyylo by hand, rolling it out with a dowl rod stick. She was so cute, stood about 4 1/2 feet tall. Anyway, very good memories to have that I took for granted growing up, I wish I would have paid more attention.
